Jamie's Summer Food Rave Up 1/3

Whether you're at a festival, on a day trip to the beach or just BBQ-ing in the garden, cooking and eating outdoors is a fantastic way to enjoy the summer sun and in this three-part series, Jamie Oliver takes you through his favourite and most inventive outdoors recipes ever.
"For me this show is all about celebrating summer," says Jamie. "Joy happiness, food that is easy, simple and refreshing and lights up your life!"
Across the series, filmed last year during Jamie's music and food festival on Clapham Common, the chef and his pals show how to smoke fish, roast chicken over a fire, create a perfect party dosa and even make a cake with the kids without using an oven. It's about getting stuck in, making do, creating some amazing flavours and having fun with friends and family, all to the soundtrack of the summer.
"The summertime is all about getting outdoors and sharing good times surrounded by your old mates and lots of lovely new ones," says Jamie. "And no matter whether you're cooking in the garden, in the countryside, at festivals, camping, or just super-charging your pic-nics so everyone talks about it... It's just about great, great food.
In the first programme, Jamie's in his festival camp kitchen cooking an amazing Indian Dosa, a delicious pancake from the streets of south India, and making Jerk Chicken and Jalapeno Flatbreads with Mr Levi Roots to serve to Jazzie B from Soul II Soul. Then he gets back to basics with his pal Gennaro Contaldo, cooking skewered fish over fire and sliced beef on hot rocks.
"For me cooking outside is about getting back to basics," says Jamie. "There's no electrical equipment, it's about fire, wood seasoning, using your hands - bashing things. And that's where the flavour comes from. So me and my mate are going to go all cave man and cook over flames!"
Finally, Jamie gets ‘legally high' on Chilli Chocolate & Churros with Willlie Harcourt-Cooze and Norman Jay.
Recipes featured include: Amazing Indian Dosa, Levi Roots-stylee Jerk Chicken with Jalapeno Flatbreads, Trout & Hot Rocks Steak, plus Chocolate (with chilli) and Churros. The programme includes performances from Soul II Soul & The Guillemots.
